1- small shallot chopped
3- fresh garlic cloves chopped
about 2 ounces olive oil
1/2- cup red wine( I know it's a white sauce, but trust me on this one.)
1- quart Heavy cream
1 cup- parmesan cheese
salt & pepper to taste
In a sauce pan heat the oilve oil. Add the shallots and cook until the shallots are translucent. It should only take a few minutes, then add garlic. Cook for a few more minutes and add red wine. move heat to med-high and let the red wine reduce into the shallots and garlic. Add heavy cream. bring to a boil and turn down heat to medium. strain sauce with a wire mesh strainer and place sauce in pan back on medium heat. Add parmesan slowly while stiring, and you have Alfredo Sauce. Don't forget the salt and pepper.
All you need is chicken or pasta to complete. I have served this sauce with pasta and mussels in bread bowls. My family still raves about it to this day. Easy dinner for parents who work and have to come home to make dinner. It's easy enough for anyone to make a quick stop to the store, grab the 6 ingredients and go home to make an alfredo sauce from scratch!
