I know it's still August but I can't wait for Fall. I wanted to post what will be comming up on Stef's Place. A friend of mine suggested that I start with some comfort food to invite the upcomming Fall season ( Thanks Lisa). I think that's a great idea so I'm doing it. I will be posting recipes that I have tried only. We will start out September with an abundance of Apple recipes to invite the warm cozy feeling of fall with the sweet gift of apples. Apples can be great to cook with, you don't always have to bake them. You can cook them with meat dishes or stuff them full of goodness. As we get closer to October I will share my Dinner in a Pumpkin recipe and Halloween favorites to share with those little monsters.
Fall is very special to me . It is my favorite time of year. I spend it sitting in my kitchen looking out my bay windows drinking tea, looking at my Victorian Trading Co. catalog, decorating the house in warm Fall colors, visiting pumpkin patches, and cooking in my kitchen of course while I have classical music playing or my mix of Glenn Miller and Artie Shaw. I think I whatch Meet me in St. Louie about 100 times during this season. My son's birthday is a few days before Halloween so I reallty get into the holiday festivities.
I will be incorperating some mexican food at Stef's place in the near future. I will share some of my families traditional dishes passed down from my Great Grandmother. My Grandmother taught me how to cook authentic mexican food. She was from Mexico and started cooking when she was 8 years old to help bring money into her home. I will also tell you about Hatch Green Chilies. Growing up in New Mexico you live off of green chile. I have some great dishes to share so I hope your ready to try them! I'm counting the days to my favorite season.

Easy Alfredo Sauce with only 6 ingredients!
1- small shallot chopped
3- fresh garlic cloves chopped
about 2 ounces olive oil
1/2- cup red wine( I know it's a white sauce, but trust me on this one.)
1- quart Heavy cream
1 cup- parmesan cheese
salt & pepper to taste
In a sauce pan heat the oilve oil. Add the shallots and cook until the shallots are translucent. It should only take a few minutes, then add garlic. Cook for a few more minutes and add red wine. move heat to med-high and let the red wine reduce into the shallots and garlic. Add heavy cream. bring to a boil and turn down heat to medium. strain sauce with a wire mesh strainer and place sauce in pan back on medium heat. Add parmesan slowly while stiring, and you have Alfredo Sauce. Don't forget the salt and pepper.
All you need is chicken or pasta to complete. I have served this sauce with pasta and mussels in bread bowls. My family still raves about it to this day. Easy dinner for parents who work and have to come home to make dinner. It's easy enough for anyone to make a quick stop to the store, grab the 6 ingredients and go home to make an alfredo sauce from scratch! bruchetta!
I just made and ate a wonderful bruchetta with toast for lunch. Here is how I made this Culinary bliss....
It's so easy. all you need is:
-bread
(any bread of your choice. You can use sliced bagette, sliced chibatta or sliced sarah lee whatever suits your fancy)
-about 4 on the vine tomatoes or roma tomatoes.
-1 clove fresh garlic
-3 fresh basil leaves chopped
-balsamic vinager and olive oil about 1/4 cup each
-shredded parmesan cheese
-sea salt and pepper to taste
- and BUTTER:)
I began by dicing the tomatoes and placing in a bowl. then I chopped the garlic clove and threw it in. Add the chopped Basil, olive oil, balsamic, salt & pepper. sprinkle parmesan and set aside.
Start melting butter in a frying pan big enough to fit 3-4 pieces of toast. I use a lot of butter but if you want a little then that will work too. toast the bread and place on a plate. you can spoon the bruchetta on the toast or let your family or friends spoon it on their own.
The beauty of this dish is you can modify it any way you want. be creative and have fun with this one. It is fresh and very easy to make. Use as a snack or appitizer.
It should serve 5-6 people. It always depends on how much they eat.

Here I am!
I am starting this blog to talk about cooking and daily life. I love to cook and don't do enough of it. I decided to start cooking more often and share my experiences and recipes. I also will incorperate some of my daily life. I'm not perfect and niether is my life. I love being a mom but yet I have a marriage hanging on by a thread I am trying to save.
Cooking has always been some sort of therapy for me. When I cook, I start to feel happy and good at something. It makes me think so I end up in my own world where my worries, disapointments and failiers go away.
My son has taken an interest in cooking. He is only 3, but I manage to find something for him to do to help me. I look forward to getting to know other foodies or Mom's like me. I will post recipes, pictures, and many other things that interest me at the moment. Please feel free to comment or share your recipes as well. I'm not sure where this is going but it will come together in time.
